Why sometimes the oil is cloudy, and others are more translucent?
The oil at ‘Las Valdesas’ is not filtered. At ‘Las Valdesas’ we prefer not to filter the oil because some aromas and flavors might be lost in the process. This is why you see it cloudy, because suspended matter which gives the oil its cloudy appearance.
At the cellars, these deposits will settle down at the bottom naturally over the months. So if you have bought the oil just after the campaign, the oil is freshly ground and will be cloudy; if you acquire it later is more transparent because much of these natural elements decanted.
Because olive oil is a fruit juice, at ‘Las Valdesas’ we recommend you always consume our oil the soonest possible, as it retains all its nutritional and culinary qualities intact. But some customers do not like the oil too fresh. For these customers we recommend purchasing the oil in May, when almost decanted, or if you already have purchased, store it for a few months, as it will also settle in its containers.
At the bottom of the containers are settlements, is the oil damaged?
Not at all! These settlements are natural vegetables leftovers that have decanted naturally in its container. The actual reason being that the olive oil is unfiltered.
